Ocean Room

Welcome to the Ocean!

You are able to enjoy the calming and relaxing colors of ocean life when you stay in this room.  There is room here for several people to stay.  You can have up to four people stay in the single beds or a couple can stay in the twin beds that are pulled together.  This room is great for a group of friends, kids or a couple.














Jungle Room

Welcome to the Jungle!

This room is comfy, cozy and quiet.  You are able to enjoy the colors and calming influence of jungle life when you stay in this room.  There is plenty of space to sit back and relax with a king size bed and a rocking chair made from the beautiful wood from Belize.

 As I walked into the bathroom, I was greeted by many fresh flowers.





Even the toilet was brightened up with fresh flowers.

Master Bedroom

Welcome to Romance!

You are able to enjoy all the romance of island life when you stay in this room.  There is plenty of space to sit back and relax with a king size bed and the soft breeze blowing off the ocean.  This room is complete with a huge master bath with a circular walk-in shower as well as your own private balcony.

 The romantic master with a king sized bed, accented with silver and grey colors.

Mango Butter Shrimp Taco's

Mango's are so wonderful to eat here.  They are ripened on the tree before picking to eat, this makes them so much better than any you can get at home.   

Tonight's dinner for Allen and Leila... Mango butter Shrimp with Mango Salsa. 
 

Who knew Mango + Butter + Lime = awesome dinner!



Mango Butter
1 Mango
1 Lime
1 Cube of Butter (cold)

Place mango and line in blender until a smooth puree.  Add cold cube of butter and blend well until the butter is smooth.  Use on shrimp, rice, crackers, or whatever.


Mango Salsa
1 Mango
1 Tomato
2 Lime
1 bunch Cilantro

Dice mango into small bite sized pieces (approx. 1/4 - 1/2 inch cubes) and place into a bowl.  Dice tomato into small pieces and add to the bowl.  Juice the limes and add to the bowl.  Place cilantro into food processor and chop up into small pieces.  Add the cilantro to the bowl.  Stir all ingredients together and enjoy on top of your shrimp taco's.


Mango Shrimp
1 lb Shrimp
Mango Butter

Peel, de-vein, and wash all the shrimp. Place shrimp in a skillet on medium heat to cook.  Add mango butter to the pan to cook.  Cook shrimp, stirring often, until the shrimp turn pink and are done.  Place shrimp and butter sauce in a bowl.

Tortillas

Place tortilla on a plate.  Spoon 3-4 shrimp into the center of tortilla.  Place 1-2 scoops of mango salsa on top of the shrimp.  Fold tortilla in half and take a bite.  Enjoy all the delicious flavors until it is gone.
